Porridge Bread Recipe.


So I’ve been clean eating for about 4 years now and I’ve honestly never felt better, I love it! But the one thing I well and truly miss is.. BREAD.

I mostly eat vegetables, fruit, nuts, seeds & grains. So no flour, no margarine & no refined sugars. Basically, bread is out of the question.

So I’m sitting in work one day with one of the girls on our lunch break, having a bowl of spinach and lentil soup and complaining about how it just isn’t the same without bread to dip in. When Nicola tells me the bread she brings in to work every day with her lunch is made out of all healthy ingredients that I can eat. Mmmm, sure Nicola, how can you have bread without flour, marg or sugar? Well folks, here it is and its so simple!

Ingredients –

1 egg

1 pack of Jumbo Oats

1 teaspoon Bread Soda

1 500ml tub of Fat Free Natural Yogurt

2 tablespoons of Milk

1 teaspoon of salt

Directions –

Pre heat your oven to 170 degrees & line a bread tin with baking paper.

Mix in a large bowl your egg, bread soda, salt, milk and yogurt.

Then use your empty 500ml yogurt tub to scoop two full tubs of oats, add them in and mix everything together.

Add mixture into the bread tin and leave in the oven for about 45 minutes.

When done, remove from bread tin, remove baking paper & place on a wire rack to allow the air to get underneath to cool.

Optional –

Most of the time I just make it plain and savoury as above. But sometimes I like to add pumpkin seeds and crushed almonds and have it with almond butter and bananas sliced on top, sooooo good.

Some ideas for what you could add in – chia seeds, raisins, chopped walnuts, mashed banana, flaxseed, chocolate chips, sesame seeds, sunflower seeds, poppy seeds, almonds, pumpkin seeds.

You really can just stick whatever you fancy in there to be honest, feel free to comment if  you’ve made this yourself already and have any recommendations of what to add in or what to have it with.

Looks like bread, tastes like bread, is better than bread. Delighted with life!
